Amazing Heart Farm’s Longneck Pumpkin Coconut Curry Soup

For a delicious addition to the holiday, pull out one of the Longneck Pumpkins you’re stored away from our fall harvest!

If you’d like to save the pumpkin seeds simply 1) collect seeds 2) rinse them 3) place them on a newspaper to dry as pictured below. Once dry, store them in an air tight container.   

             

Amazing Heart Farm’s Longneck Pumpkin Coconut Curry Soup:

To prepare the squash, halve the squash and cut into smaller chunks as pictured in the oven shot below.  Bake the squash at 400 degrees for about an hour, or until cooked.  Once you’ve removed the squash from the oven, scrape the baked squash into a bowl and mash together.

Now you’re ready to combine the squash with the other soup ingredients. The following is a recipe I’ve thrown together with the ingredients available to me. Because it turned out quite well, I thought I’d share it but there are lots of pumpkin curry soup recipes out there if you want something a bit different.

Ingredients:

  • 5 cups baked Longneck pumpkin
  • 32 oz. chicken broth
  • 1.5 cups coconut milk
  • 1 12 oz. jar Karma simmer sauce (Seeds of Change)
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cumin
  • 1 tsp ground mustard
  • 2 teaspoons curry powder (or to taste)
  • salt & pepper to taste

Combine ingredients and simmer, uncovered, stirring occasionally, 30 minutes. Purée soup in batches in a blender until smooth (use caution when blending hot liquids), transferring to a large bowl, and return soup to pot. Keep soup warm over low heat.  Season soup with salt and pepper or other herbs. Soup can be thinned with additional water.

   Serve and Enjoy!
