Garlic Scapes

Garlic scapes are the flower stems produced by garlic plants. Some growers believe that cutting off these stems will increase the size and storage life of garlic bulbs. Others believe it makes no difference. To learn more, check out this grower’s story of the great garlic scape experiment. But regardless, garlic scapes are known to be a tasty addition to stir fries, roasted veggies and dips and pesto. For example, try this hummus recipe, or this garlic scape & almond pesto recipe. Or, for something simple, we’d recommend trying garlic scapes sautéed in butter with mashed or lightly browned diced potatoes for a quick side dish.
