Greetings!
This week’s CSA share includes scallions. If you’re unfamiliar with scallions, the recipe for a Shrimp and Scallion Stir-fry that I’ve included with your shares can be found here. Or, try frying them up with some eggs. For example, this evening, I wanted something that I could make quickly and with the ingredients I had on hand. So I chopped up a bunch of scallions and several cloves of garlic, tossed them in a frying pan with some olive oil, then added a few hand fulls of baby tatsoi, some scrambled eggs, cheese and… Voila! Not the most beautiful meal, but one that is filled with nourishment. And so easy!
